There was some interest from the bipolar board. This is the sheet the dietician from the hospital gave me (obviously vegetarians won’t be eating the meat)

She said to have up to half your weight in pounds converted to grams in protein (ie someone weighing 140lbs would have up to 70g of protein/day, exceeding that, which I guess is a trend because “protein is filling” (so is fiber and fat—the other macronutrients), can lead to dehydration, GI issues, and kidney problems like painful stones and failure)

But if you don’t eat meat getting enough protein can be hard if you don’t know where to go.

Other sources not on the paper include oats, other nut butters and sunflower seed butter , tempeh (18g per 3oz serving!), seitan/wheat gluten (17g per 2oz), nutritional yeast, spirulina, and for vegetables spinach, broccoli, peas, potatoes, and brussel sprouts are somewhat high compared to other veggies, and guava, avocado, kiwi, and jackfruit are some fruits that can contribute to your daily protein goals.

Here was my overnight oats recipe I made for today--just toss em all in a jar and let the oats soak up the liquid for I'd say give it at least 6 hours:
1/2 cup rolled oats (6g protein/4g fiber/3.5g fat (1g saturated))
1/4 cup plain greek yogurt from skim milk (6g protein)
1 cup soy milk (7g protein/2g fiber/2.5g fat/0.5g saturated)
1tbsp roasted unsalted sunflower seeds (~2g protein/1.5g fiber/4.5g fat/minimal saturated)
total of 21g of protein/7.5g fiber/10.5g fat (1.5g saturated)
threw in vanilla extract last night and mixed in cinnamon and allspice this morning for flavor. You probably wouldn't need to add the flavor so much if you just used a flavored yogurt. Was going to throw in some blueberries but ate them all before making it

Thankz, muddy!

Yeah i am always disappointed that imitation crabmeat is mostly carbs, not protein. Sometimes you can get a good price on it, but it really does not deliver the protein bang for the buck.

I see a lot of recipes for adding like beans to your tuna fish salad. This never made sense to me. Either one will give you ample protein - why would you combine two protein foods?

I am Team Lima Bean, however!

I think part of that is taste/texture and part of that is beans are a much better source of fiber than tuna

Lima beans are the shizzz

I tried being vegan but I had to give it up after a couple months. I wasn’t getting enough protein and I was eating too many carbs.

I’m what they call a half vegetarian. I think there’s a name for it. But I don’t eat meat every day. Only like 3 times a week.

*1/4 cup rolled oats I meant. I used the extra thick kind which might make a difference in how absorbent they are.

I will try your recipe.

I also recommend millet, which is a grain that has more protein than oats. I cook it with almond milk/water, cubed butternut squash, and then some butter. You can also add a few toasted pecans on top. Very tasty and provides a variety. I used to cook steel-cut oats each morning, varying only what I add to it towards the end of cooking (blueberries, tart apples, tart apple juice, chia seeds), but now I alternate grains.

Another grain that has more protein than oats is buckwheat. Its protein is also complete, which is rare for plant proteins. But you need toasted buckwheat, which looks dark. Bob's Mill buckwheat is blond and needs toasting before cooking.

What I didn't see in the OP's attachments: flaxseed, chia seed, hemp seed.

What does Millet taste like? Could you make something that was like half oat half millet so you get extra fiber from oats and extra protein from millet and your mouth not cry? (I looked it up and it's not available in store anywhere near me but even if I had it shipped it's not as cheap as oats)

Ive been worried millet was going to go up in price like quinoa. It is sooo delicious, esp if you toast it in the pan (with a touch of butter? Mmmmmm!) before adding the water. I wouldnt combine it with oats - that seems disrespectful to the millet! Technically its "only" birdseed, but it FEELS royal. Like the girl says,

So I could just get bird food instead?

Ocean State Job Lot has all the Bobs Red Mill you can find in store around here practically and I only see millet flour on their shelf!

I could rinse off the bird seed like you do with dry beans tho

Yes, millet should be toasted in the pan before you add liquid, but even before that, you need to rinse it in hot water. You can pour boiling water on it. Rinse until the water runs clean

. I have never combined millet with oats, but you probably can if you use steelcut oats, which take about the same time to cook. Millet tastes delicious with a little butter. How does it take? Maybe a little nutty. Hard to explain. Have to try it, both on its own and with cubed butternut squash.

Millet on its own has lots of fiber. Add squash and there is even more fiber.

I have made your overnight oats recipe. I added one tablespoon of black chia seeds, 30 blueberries, and about half a teaspoon of bourbon maple syrup. It was very good! I used 6 oz of 2% plain Greek yogurt.

I forgot to add cinnamon to the overnight oats. I will try again soon.

Instead of soy milk, I used Elmhurst almond milk (just almonds and water are its ingredients). But I will try with soy milk, too. I just need to buy soy milk.

I made overnight oats but I put in a cup of oats, a cup of vanilla Greek yogurt, about a cup of almond milk, and a tablespoon of vanilla extract. Not sure if I made too much or what it will taste like.

There were so many soy milk options at Safeway, both shelf-stable and refrigerated. Which brand do you use, Muddy?

Whatever is cheapest haha. I get shelf stable if I feel like I’m at risk of going IP soon. If there are no coupons I’ll get Rolling Hills Farm (I’ve only seen that at Market Baskets though), or the Shaws brand (O Organics) if I can’t make it all the way out to MB. Silk sometimes has coupons making them cheaper though. I decide ahead of time whether I’m drinking it mostly plain or what I’m going to be making with it and base whether I’m getting vanilla or unsweetened plain on that.

I found millet and made some. Added lime juice, garlic, onion, chili powder, oregano, and black pepper. So good!!! It feels like just a vessel for the flavorings, but still good.
